  The Clean & Classic Profile. This traditional method strips away the cherry fruit completely before drying, resulting in an exceptionally clean cup. • Honey Processed Green Beans

  The Sweet & Balanced Middle Ground. In this boutique process, the skin of the cherry is removed but some of the sticky, sweet mucilage (or “honey”) is left on the bean while it sun-dries.
